Vegetarian Moroccan Stew

Ingredients
Beans, white, 2 cup (remove)Carrots, cooked, 2 carrot (remove)Onions, raw, 1 medium (2-1/2" dia) (remove)*Spinach, cooked, 2 cup (remove)Pacific Natural Foods Organic Free Range Chicken Broth, 1 cup, 5 serving (remove)*Extra Virgin Olive Oil, 1 tbsp (remove)Curry powder, 1 tbsp (remove)Chili powder, 1 tbsp (remove)Saffron, 1 tsp (remove)Couscous, 1 cup, dry, yields (remove)
Directions
Heat olive oil in large sauce pan. When hot, saute carrot and onion until onion is translucent.
Add beans, lentils, spinach and spices. Saute to coat the veggies with the spices.
Add broth and simmer until lentils are tender
Serve over cooked couscous

    This isn't vegetarian if you have "Chicken broth" as an ingredient. Maybe you can substitute veggie broth. - 7/25/08
