Quick and Easy Vegetarian Thai Coconut Soup

Ingredients
3 cups vegetable broth1 cup shittake or other mushrooms, thinly sliced1/2 cup tomatoes, diced1 cup coconut milk2 tbsp lime juice1/3 tsp salt1/3 tsp red pepper flakes OR 1/4 tsp cayenne pepper, or to taste2 tbsp chopped fresh cilantro
Directions
In a large soup or stock pot, bring the vegetable broth to a simmer. Add remaining ingredients, except for cilantro, and allow to cook over medium-low heat for at least fifteen minutes, stirring occasionally.
Remove from heat and stir in fresh chopped cilantro just before serving.
