Cabbage Veggie Soup

Ingredients
1 onion, diced3 cloves garlic, minced1 1/2 tbsp. oilI head cabbage, chopped3-4 small zucchini, sliced2 large carrots, sliced3 stalks celery, sliced28 oz. canned diced tomatoes6 cups lowfat chicken broth1 tsp. dried oregano1 tbsp. dried basil1 tbsp dried parsleysalt and pepper to taste
Directions
1. Saute onions and garlic in oil until onions are translucent and arromatic.
2. Add all of cut veggies at once and cook briefly. (1-2 min)
3. Add canned tomatoes and chicken broth.
4. Add dried herbs, salt, and pepper.
5. Simmer on stove for about 3-4 hours until all veggies are tender.
6. Serves about 16.
