Breakfast Crock Pot Scramble

Ingredients
2 c Egg Beaters or other egg substitute4 large eggs2 c shredded sharp cheddar cheese1 - 12oz package cooked breakfast sausage1/2 c milk2 c frozen o'brien potatoes1/2 tsp salt1/2 tsp pepper1 Tbs dried parsley1/2 tsp onion salt
Directions
This makes about 8 1-cup servings.

Spray the inside of your crock pot with Pam to help prevent sticking.

Place the frozen o'brien potatoes at the bottom of the crock pot. Cut up each of the sausages into thirds and place those on top of the potatoes. Then add the shredded cheese.

In a separate bowl lightly beat the eggs, milk, and spices. Pour this mixture into the crock pot.

Turn it on high and stir it about every 10 - 15 minutes during the approximate two hour cooking time. You will want to stir more often once the liquid is mostly gone.

Enjoy!

One options is to do this the night before by keeping your crock pot on low, but I never like leaving my crock pot on at night so I don't. But it is an option.
