Spanish Rice with Lentils

Ingredients
1 Tbsp oil2 cloves minced garlic1 medium chopped onion1 - 28 oz can diced tomatoes1 - 19 oz can lentils, rinsed & drained1 cup quick cooking brown rice1 cup water1/2 tsp each: paprika, cumin, chili powder, chili flakes1 diced green pepper
Directions
1. In a large saucepan, heat oil over medium heat, add garlic & onion, saute for 3 - 5 minutes until onion is softened
2. Add tomatoes, lentils, rice, water, paprika, cumin, chilipowder, & chili flakes. Bring to boil, reduce heat and let simmer for 20 minutes, stirring about every 5 minutes
3. Add green pepper, simmer uncovered for a few more minutes or until rice is tender
