Brocolli Rice Soup (Elaine's)

Ingredients
1 1/2 cups carrots, diced (2 medium)1 cup diced onion (1 medium)2/3 cup diced celery (2 stalks)4 cloves garlic (crushed)1 tbsp. canola oil5 cups non fat chicken broth4 1/2 cups brocolli florets1/2 cup parboiled brown rice (uncooked)1 1/2 cornstarch2 tbsp cold water2 cups Rice Dream Milk (original enriched)
Directions
Saute onion, celery, carrots, garlic and oil in a large sauce pan on medium heat until onions are clear. Add chicken broth and rice. Bring to boil and lower heat and cook forfor 10 minutes. Add brocolli, continue cooking for another 7 minutes.
Stir cornstarch and cold water together in a small container stir into the soup, bring to boil until it thickens. Add Dream Rice Milk and serve.

If you are not lactose intolerant, use skim milk. Garnish with a sprinkle of parmesan cheese.
