Low Carb-Crockpot Beef Stew

Ingredients
2- lbs of Stew Meat3- Cups of Water, I use Bottled Water2- Tbsp of E-V-O-O (extra virgin olive oil)1- Cup of Onions, Chopped1- Cup of Celery, Chopped1 Large Carrot, (carrots are High in Carbs, so only use 1 big one!!)1- 10oz Package of Frozen Peas2- 8oz Cans of Tomato SAUCEGarlic Powder, Onion Powder, Oregano, Salt, and Pepper are to your taste. I love garlic so I use a whole lot!!!!
Directions
In your crockpot put the water, onions, celery, carrot, peas and tomatoe sauce in. Turn it on high. Then in a pan put the EVOO in and turn on heat, put the meat in, and cook all sides until brown. Now you will probably have to drain some of the juices so it will brown properly. DO NOT ADD FLOUR!!! Then add to the crock when done. Add your spices to your taste. I love garlic so I always add more!! This should cook for about 5-6 hours on high, if you want the meat to be really tender then cook for 8 hours. This should feed about 8-10 1 cup servings. This is a great winter meal, so you can freeze and heat later on!!!!

    I didn't have peas or carrots.. so I just used a whole bunch of celery, one onion and a can of organic whole tomatoes. I cooked it for 8 hours and my 4 year old was able to eat the meat (usually it would be too tough for her). It was a bit soupy which was no problem for us. - 10/15/11
