Spanish Chicken

Ingredients
1lb boneless, skinless chicken breast, diced1 box of Zatarains Spanish Rice1 -14.5oz can of fire roasted tomatoes, diced1 14oz bag of Southwestern Vegetable Blend1-10.75oz can of condensed Cheddar Cheese Soup1 1/2 c water
Directions
In a nonstick pan on medium high heat, cook chicken until no longer pink. Add Zatarains Spanish Rice, vegetable blend, tomatoes, cheddar cheese soup, and water. Stir well and bring to a boil. Stir, cover, reduce heat, and simmer for 25 or until all water is absorbed. Remove for heat, let stand for 5 minutes. Stir and serve. Makes 7 1-cup servings
