Ingredients
3 Yukon Gold Potatoes (1#), quarteredNon Stick Cooking Spray (e.g., Pam)1/2 tsp freshly ground black pepper1 tsp salt1 Tbsp fresh parsley, chopped2 cloves garlic, minced
Directions
Preheat oven to 400 F. Place potatoes on baking sheet; spray to coat. Season with salt, pepper, garlic and parsley. Roast until golden and crispy on the outside, tender on the inside (about 30 minutes).
