Cheddar Cheese Soup

Ingredients
1 Small Onion, chopped1 Med Stalk Celery, thinly sliced1/4 ts Dry Mustard1 can Chicken Broth2 TB Flour1/4 ts Pepper1 Cup Milk8oz Shredded Cheddar CheesePaprika
Directions
Simmer onion and celery in melted butter in a 2 quart pan, covered, until onion is tender, approximately 5 minutes.
Add flour, pepper, and mustard. add broth and milk. Heat to boiling on medium heat, stirring constantly, for 1 minute.
Stir in cheese. Heat on low until cheese is melted, stirring occasionally. Sprinkle with paprika.

    Super easy to make, but I might add something else next time. Perhaps potatoes? I guess I don't really like celery so that was the big downside for me. My son LOVED it though! A great way to get him some veggies! - 11/25/09
