Homemade Breakfast Burritos

Directions
Takes about 30-45 minutes to prepare the batch and 1 to 2 minutes to reheat. This makes ten burritos, you can then freeze and microwave for a quick breakfast any morning. Freezing them doesn't affect the taste, and saves you time each morning.

Despite the length of the instructions, this is really a simple recipe. (1) Cook sausage eggs, etc. in a skillet; (2) steam the tortillas; (3) fill and wrap the tortillas; (4) wrap the burritos for the freezer; (5) reheat when needed.

If you lack either the time or large steamer, then you can use a microwave, a little water and plastic wrap. These instructions use the microwave method. Prepare the tortillas: (Caution, you MUST use a quality plastic wrap or it will melt in your microwave and ruin the tortillas.) Lay out a layer of plastic wrap. Pour about a teaspoon of water onto the wrap and put on a tortilla. spread it around to absorb the water into the tortilla. Add another teaspoon of water to the top of the tortilla, rub the water into the tortilla, and cover with another layer of plastic wrap. (I fold the wrap back and forth over each layer.) Repeat this for each of the tortillas you are making. Wrap the plastic wrap around the tortillas so that you have sealed it, but have not bent the tortillas. Set them aside.

Chop the sausage into bite size pieces. Cook the sausage in a covered skillet over medium heat until they are fully cooked. Stir occassionally, to prevent them from sticking to the pan. While the sausage is cooking, prepare the eggs. Crack all the eggs into a mixing bowl. Add cilantro to taste (about 1 teaspoon per burrito). If desired, add salt & pepper or other dry spices. Using a whisk mix the eggs thoroughly, until the color is smooth throughout.
When the sausage has cooked thoroughly, raise the temperature to medium-high. Give the skillet about 20 seconds to heat, then pour in the egg mixture. Add any optional ingredients to the skillet. Mix the sausage, egg mixture and other ingredients. Cook until the eggs are firm, but not dry. Stir often to prevent it from sticking to the pan, and from burning. When the eggs are only slightly runny, put the wrapped tortillas into the microwave and microwave them on high for 1 minute. The key here is to have the filling ready at the same time, or slightly before the tortillas. If the eggs are done and the tortillas aren't, move them to a new burner on low (if an electric) or turn the heat to low (if gas) and cover. This should keep the eggs warm without overcooking them.

Remove the tortillas from the microwave. (WARNING: they will be extremely hot!!) Work your way through each tortilla one at a time. If you unwrap all of them at once, they will cool and dry out too fast.

Take a tortilla out of the wrapper, place two halves of a cheese slice across the middle of the tortilla, forming a long rectangle. Spoon the filling over the cheese in the same line. If you want, you can add salsa or taco sauce for extra spice.

Fold the tortilla:
Folding instructions assume that the circle of the tortilla is crossed by a rectangle of filling horizontally over the center of the tortilla. When you look at it, the empty portion of the tortilla will be at the top and bottom. (Hopefully, this is sufficiently clear.) Fold the left and right sides over the edges of the filling. The tortilla edges will not touch. Now, fold the bottom of the tortilla over the center. Be sure to keep the left and right sides tucked under the bottom fold. Complete the fold by rolling the bottom fold and filling upwards over the remaining portion of the tortilla.

Set the burrito aside with the last fold down and repeat the filling and folding until all the filling and tortillas are used.

Preparing for the Freezer:
For each burrito you are going to freeze: Lay out a square of parchment paper. Place a similarly sized square of plastic wrap over the parchment paper. But the burriton in the center of the square, diagonally. Fold the plastic wrap and parchment paper together around the burrito. Be sure it's wrapped snuggly and there are no gaps. Store the wrapped burritos in the freezer.

Reheating:
Cut one end of the wrap off the burrito. Microwave on high for 1:30 to 2:00 minutes.
