Pasta Fagiole

Ingredients

1 pound dried navy beans (about 2 - 2.5 cups)1 small can diced tomatoes3 Tbsp. olive oilfresh and/or dried sage, to taste (about 1/4 cup fresh or 1 Tbsp. dried)salt and pepper to taste4 garlic cloves, minced or pressed1 box (8 oz.) pasta of choice (I use quinoa or brown rice pasta)
cook beans in water to cover plus extra, 1 hour stirring occasionally.
Add oil, garlic, sage, salt & pepper, tomatoes (1 can) and stir well. Cook for 1.5 hours. Add more seasoning, if necessary.
Meanwhile cook the pasta according to directions and set aside.
Use a hand blender and puree beans/soup until smooth, or blend in batches in countertop blender. Serve as a soup with cooked pasta and sprinkle with parmesan cheese, if desired.
