1/4 CUP 50-50 SMART BALANCE3/4 CUP SPLENDA BROWN SUGAR1/2 CUP EGG BEATERS(OR TWO LARGE EGGS)1/2 CUP UNSWEETENED APPLESAUCE1 1/2 CUP WHEAT FLOUR1/2 TEASPOON SALT1 TEASPOON CINNAMON1 TEASPOON BAKING SODA1 1/2 OLD FASHIONED OATS OR (QUICK)1/2 APPLE CHOPPED FINE1/3 CUP DRIED CRANBERRIES1/2 CUP CHOPPED WALNUTS

30 BREAKFAST SIZE COOKIES

1 PREHEAT OVEN TO 350 DEGREES F.
2 COMBINE BUTTER AND SUGAR IN THE BOWL OF AN ELECTRIC MIXER, BEAT UNTIL LIGHT AND FLUFFY, ABOUT 1 MINUTE. ADD EGG BEATERS AND BEAT FOR 30 SECONDS, ADD APPLESAUCE AND BEAT JUST TO MIX.
3 IN ANOTHER BOWL, STIR TOGETHER FLOUR, SALT, CINNAMON AND BAKING SODA, ADD TO MIXER AND BEAT TO FORM BATTER. MIX IN OATS. ADD APPLES, CRANBERRIES AND WALNUTS, BOMBINE BY HAND. 4 COAT COOKIE SHEET WITH COOKING SPRAY, DROP BATTER BY HEAPING TALBLESPOONS, 2 INCHES APART. BAKE UNTIL COOKIES ARE LIGHTLY BROWNED AND FIRM. ABOUT 13 TO 15 MINUTES.
5 REMOVE FROM THE OVEN AND LET STAND 10 MINUTES. MOVE TO WIRE RACK AND COOL COMPLETELY. NOTE: STORE LEFTOVERS IN AN AIRTIGHT PLASTIC BAG AOR CONTAINER IN THE FREEZER.

    50/50 SMART BALANCE IS A BLEND OF BUTTER AND SMART BALANCE OMEGA 3 BUTTER. IT IS SOLD IN MOST STORES IN THE REGUALR BUTTER SECTION. I HOPE YOU CAN FIND IT, HOWEVER ANY BRAND OF BUTTER CAN BE USED AS LONG AS IT IS STICK BUTTER, THE CALORIES ARE BASED ON THE SMART BALANCE BRAND.

    Tried but was a little dry. I soak the oats in the applesauce and it made a big difference. More chewy. Excellent - 10/21/08
