Apple Cinnamon Pancakes

2 cups Heart Smart Bisquick1 cup skim milk1 egg1 cup apples, chopped2/3 box raisins1 Tbls I Can't Believe It's Not ButterPinch nutmeg1 tsp cinnamon, divided2 tsp Splendawater to thin to pancake consistency
Mix together chopped apples, raisins, 1/2 tsp cinnamon, nutmeg and "butter" in a m'wave safe dish. M'wave until soft enough to mash. Set aside.
Mix bisquick, milk, egg, and enough water to thin to pancake consistency. Fold in fruit mixture.
Spray griddle with Pam, heat over med-hi heat until you can feel the heat on a hand put 1" from the surface. Spoon mix on hot griddle. Flip when you begin to see small bubbles in the middle and slight browning on the edges.
Mix remaining cinnamon and Splenda. Sprinkle over pancakes. Use "butter" if desired. Drizzle 1 Tbls syrup over all and serve!
