Veggie Omelet

Ingredients
5 medium spears of fresh Asparagus1 Roma Tomato 1/4 cup Mushrooms1/4 cup chopped Onions1 tbsp Olive Oil1 slice Mori-Nu, Tofu, silken, soft1 large Egg1 tsp Italian Seasoning/Herbs1 oz. Mozzarella Cheese, part skim milk
Directions
1. Chop all veggies into bite size pieces
2. Beat egg and mix in tofu in a small bowl
3. Heat olive oil in a medium or large frying pan
4. Saute veggies until tender in the oil
5 Stir in egg and tofu mixture
6. Cook until al most firm and add in mozzarella cheese fold and continue to cook until cheese is melted
