Ingredients
**NUTRITION INFO is different than actual recipe due to few variations in type of ingredients*3 lbs small white potatoes (but you can really use any potato you like)kosher salt*1 C mayonaise (best foods mayo light with canola oil is the best)1/2 C of dijon mustard 1 C chopped onions *1 C chopped green onions*1 C cooked rice (i prefer niko niko white rice but you can obviously change to what you prefer)*optional: 1 stalk of celery
Directions
prep and cook time is an estimate this is my own recipe and I forget how long it takes. i'm estimating 15-20 min for the rice and the same for the potatoes and you should have at least 15-20 minutes in the fridge (until its cool)


dice your potatoes (i prefer to dice them before i cook them but its whatever you prefer) you can cook them first and then dice.

they just at somepoint need to be diced and cooked :)

cook your rice according to the directions or the method you use (rice cooker or stove top)

dice your onions, green onions, celery

when everything is cooked and diced mix all the ingredients together and cool in the fridge and serve
