Oatmeal Pancakes

Ingredients
Milk - 2 cupsUncooked Oatmeal - 1 1/2 cupsSalad oil - 1/3 cupEggs - 2Flour - 3/4 cupSugar - 2 tbspBaking powder - 2 1/2 tspSalt - 1 tspCinnamon - 1 tsp
Directions
- combine milk and oatmeal and let set for 2 minutes
- then add the rest of the ingredients and mix
-heat up pan or griddle
-use 1/4 cup for pouring out each pancake
-when air bubbles start to form, flip pancakes
-eat and enjoy when their is no more batter

makes about 15 to 20 pancakes

you can use apple sauce as a sub for the oil and reduce the K cals, but if your diet allows for the fat intake they are much better with oil.

    These were amazingly good!!! Yes, the fat content is high, but eat in moderation!! The oatmeal is filling, so it shouldn't be so hard. They were great!! - 1/24/09

    I think this could be made healthier by lowing the fat content ... use vanilla soy milk , eggbeaters, replace oil with applesauce... I will try to make this one over. - 1/14/09
