Cabbage Roll Casserole

Cabbage - 1/2 medium headGround beef - extra lean - 1 poundStewed tomatoes - 2 cans (4 cups)V 8 Juice - 2 cupsUncooked Mixed Rice: wild rice, brown long grain, brown medium grain, (or white rice) - 1 cupOnion - 1 cup choppedGarlic - 3 cloves mincedSalt - 3 tspPepper - 1 tsp
1. Slice 1/2 head of cabbage into thin slices and place in the bottom of a casserole dish. Reserve two slices for top.
2. Mix ground beef, salt, pepper, minced garlic, chopped onion, and rice together.
3. Drop ground beef mixture by teaspoons over top of cabbage.
4. Scatter remaining cabbage over mixture.
5. Pour stewed tomatoes over top of mixture.
6. Pour in V8 juice.
Bake uncovered in 300 degree oven for 2-3 hours or until cabbage is tender.
Makes approximately 10 1-cup servings.
