1 cup yellow corn meal1 cup sifted enriched flour2/3 cup sugar1/2 teaspoon salt4 teaspoons baking powder1 egg1 cup fat free milk1/4 cup canola oil
Sift together dry ingredients into bowl, add egg, milk, and oil. Beat until smooth, about 1 minute. DO NOT OVERBEAT. Bake in greased 8 inch square pan in hot 425 degree oven for 20 to 25 minutes.
