Vegetarian Barley Chili

1 tbsp olive oilonion, 1 medium, choppedgarlic, 2 tspChili powder, 1 tbsp Cumin , 1 tbsp Barley, pearled, 1/2 cupCanned Tomatoes, 411 gramsSweet Corn, Fresh, 1 cupChickpeas (garbanzo beans), 439 grams, Beans, red kidney, 439 grams, Vegetable Broth, 2 cup Jalapeno pepper, chopped 1/4 cup
1.In a large pan heat olive oil and add onion and garlic and cooked for a couple of minutes until soft.
2. Add the chili and cumin and stir until combined.
3. Add all the remaining ingredients to the pan and bring to a boil; cover and reduce heat to low. Simmer for 20 min. stirring occasionally add more water/broth if necessary until the barley is tender.
serve with grated cheese, crushed tortilla chips or sour cream
