Tofu with Black Beans and Garlic

Ingredients
1 t. sesame oil14- or 15- oz. can organic black beans, rinsed and drained1 T. minced fresh garlic1/3 c. sliced light extra firm tofu2 t. grated fresh ginger3 T. hoisin sauce
Directions
Heat oil in a nonstick skillet. Add beans and garlic; stir-fry 2 minutes. Add tofu and ginger; cook, stirring frequently, 2 minutes. Stir in hoisin sauce. Serve over cooked organic brown rice.

    This was my first tofu dish and was surprisingly delicious and easy to make. We've made it with fried rice and with brown rice; and of course, the fried rice tastes best. - 12/28/08
