Roti

Ingredients
2 cups whole wheat white flour (King Arthur brand)2/3 cup water1 teaspoon salt2 Tablespoons canola oil.
Directions
This makes 8 Roti or breads.

Mix the ingredients together then knead on a floured surface until smooth and elastic, about 8 minutes. Cover let rest about 30 minutes. Divide the dough into 8 equal parts. Roll out on floured surface into very thin rounds. Heat a cast iron griddle on high. Fry each roti on the griddle until little brown or black specks and bubbles appear. This should take about 30 seconds on each side. The roti should also puff up a bit. Enjoy!
