Mexican Beef Casserole

Ingredients
Directions
1 lb lean ground beef1/2 cup crushed tortilla chips1 packet taco seasoning1 can Rotel tomatoes & diced chilies1/2 lb Velveeta1 cup white rice1 can sliced black olives
Diced Velveeta in microwave bowl. Add Rotel. Heat until cheese is melted and smooth.
Meanwhile, cook rice according to package directions. Brown ground beef until done and drain. Add taco seasoning to ground beef. Stir until well blended. Mix half of rotel/cheese mixture in with the rice.
Spray casserole dish (9x13) with non-stick spray. Layer tortilla chips, the rice mixture, then the ground beef. Drizzle remaining rotel/cheese over the top and sprinkle with black olives. Bake at 350 degrees for 15 minutes or until cheese is bubbly.
