1 cup coconut milk1 tbsp curry powder1 cup sweet red peppers1 cup mushrooms1 cup carrots1/4 cup sweetened coconut48 medium raw shrimp
Combine all ingredients except shrimp cook over medium heat for approximately 5 minutes. Add shrimp and cook for another 10 minutes or until shrimp is pink. Serve over rice.
