Apple Crumble

5 medium apples, peeled, cored and sliced thin1/3 cup honey2 tablespoons fresh lemon juice1 teaspoon grated lemon rind1/2 teaspoon ground cinnamon1/8 teaspoon ground nutmeg1 tablespoon butter, melted1 cup low-fat granola1 cup apple juiceOptional adds: 1/2 cup raisins and/or 1/4 cup chopped nuts
Place the apples, honey, lemon juice, lemon rind, cinnamon and nutmeg in a mixing bowl and stir to combine. Spread apple mixture in an 8-inch baking dish. In a separate bowl, combine the granola and butter and spread over apples. Add apple juice to pan to provide moisture for cooking. Bake at 350F for 40 minutes. May also be served with 1/2 cup nonfat plain or vanilla yogurt. Please Note that raisins, nuts and yogurt are not included in the nutritional info.
