Ingredients
3 Eggs1 Cup Granulated Sugar1 Cup unsweetened applesauce2 Cups shredded Zucchini1 tsp Vanilla extract1/2 cup Oat Bran2 Cups Whole wheat flour1/2 Cup All purpose flour2 tsp cinnamon1/4 tsp ginger1/4 tsp nutmeg1/2 tsp salt2 tsp baking powder1 tsp baking soda
Directions
Mix eggs, sugar, Applesauce, shredded, zucchini and vanilla

Add whole wheat flour, all purpose flour, oat bran, cinnamon, ginger, nutmeg, baking powder, baking soda and salt

Mix well. Spoon into muffin pan. Spray pans with cooking spray and bake in over for 20-25 minutes at 325 (F) or 162 (C)Should make 26 muffins.

    Delicious and not dry at all! Check early with a toothpick. Do not overcook. Finely shred the zucchini and pack to measure. I will make them often. I made with 6 egg whites no yolks, lower cholesterol that way. Really enjoyable. - 7/23/10

    I didn't find them dry but I did use a little more than 2 cups grated zucchini and also added carob chips. Also I didn't have oat bran so substituted wheat bran.
    My 1 and 4 year old girls helped me make them and they were easy to make. We'll be making them again for sure! - 5/15/10
