1 15oz can pure pumpkin1 cup I Can't Believe It's Not Butter, Light 1 cup granulated Splenda, 48 tsp 1 cup sugar2 tsp Baking Powder2 tsp Cinnamon, ground1 tsp Salt3/4 tsp Nutmeg, ground,.5 tsp Baking Soda.5 tsp Allspice.5 cup Egg Beaters (equiv. to 2 eggs)1 tbsp. Vanilla Extract, 4 cups flour1 bag chocolate chips (appx 2 cups)You can also substitute pecans for the chocolate chips, but I didn't calculate the nutritional info for that. These cookies can also be frosted, that recipe will be posted as well.
1.Grease a cookie sheet,set aside.In a large bowl beat butter with an electric mixer on medium to high speed for 30 seconds. Add the sugar, splenda, pumpkin, baking powder, cinnamon, salt, nutmeg, baking soda, and allspice. Beat until combined, scraping side of bowl occasionally.
2.Beat in eggs and vanilla until combined. Beat in as much of the flour as you can with the mixer.Stir in any remaining flour. Stir in chocolate chips or pecans.
3. Drop by rounded teas.1 inch apart onto prepared cookie sheet. Bake in 350 degree oven for 12 to 15 minutes until edges are brown .
4.Transfer cookies to a wire rack and let cool.
