Twice Baked Potato for One

Ingredients
Directions
1 medium to large potato1/4 cup silk1 Tbsp light butter1/2 oz cheddar cheeseOptional:1 tsp olive oil1 tsp salt
Preheat oven to 350*
Wash and scrub potato
Stab with a fork 6-12 times around potato
Optional: rub outside of potato with olive oil, salt and rosemary or basil
Wrap potato in foil
Once oven is heated to 350* cook potato for 90 minutes or until tender
Remove potato and let cool
Slice potato in half delicately and scoop out everything except the skin
Mix potato with silk, butter, cheese, salt and pepper to taste until smooth
On a baking tray refill potato skins
Place in oven for 15 minutes
Remove and let cool
Enjoy!

Add protein/remove fats by adding some pulled/shredded beef or chicken with 1/4 cup low calorie low sugar BBQ sauce instead of the butter and cheese. The BBQ sauce is enough liquid to get the potato mushy and you get the tang. This kicks my craving for a giant meat and potatoes dinner. - 2/28/11
