3 Pork, fresh loin, top loin (chops) boneless Lean ones.1 tbsp olive oil7 medium tomatillossalt to tastelow carb tortilla's1 can no-fat refried beans
Pull husks off tomatillo's and put in pot with water to boil. Cook until the tomatillos burst open.
Heat 1 tbsp of olive in skillet and heat dried peppers until soft.
Put cooked tomatillos in blender with liquid and add cooked peppers and puree.
Cut the chops into 1/2 inch cubes and saute in skillet until cooked through.
Add tomatillo mixture into the skillet with the pork and heat through.
Serve with warm flour tortillas and refried beans.
