Fried Plantains with Queso Fresco

Ingredients
2 - 3 large very ripe plantains2 tbs extra virgin olive oil2 oz queso fresco - Spanish cheese can be found in any Latino store. The fresher the better (very fresh will be very moist and soft, older will be drier and firmer)
Directions
Heat oil in frying pan. Slice plantains as you desire 1/4" thickness. Place in frying pan and cook until golden. About 2 minutes. Turn and cook until golden. Remove from heat and place on paper towel to get rid of excess oil. Crumble queso fresco over plantains and enjoy. Tastes best with very fresh queso fresco.
For even better flavor, sprinkle cayenne pepper over plantains after cooking and add cheese on top.
