    6 oz. cocktail Shrimp
    1 lg. Shallot, (about 2.5 oz.)
    2.5 oz chopped black olive
    2 tsp. Italian Season Mix
    1/4 cup Imagine, Vegetable Broth (organic)
    2 oz. pickled Capers
    2 tbs Basil, fresh chopped
    1/4 cup Oregano, fresh chopped
    8 oz. *Better Than Cream Cheese (non-hydrogenated) [Tofutti]


** Set precooked, thawed shrimp aside until the very last step.

Spray fry-pan with non-stick spray. Chop shallots and carmelize on stove-top. When they begin to stick, add vegetable broth, italian season and garlic. Stir together until broth is reduced, nearly gone.
Remove to mixing bowl.

Meanwhile, drain and chop olives and capers, chop oregano and basil.

Stir in remaining ingredients (except shrimp) with cooled mixture.

In food processor, mix Tofutti with cooled ingredients. Return completed mixture to mixing bowl and fold shrimp into mixture.

Serve as side dip or spread.

Makes approximately 10, 1/4 cup servings.
