Buffalo Chicken Casserole

Ingredients
3 chicken breasts, cooked and cubbed1 c. celery, chopped1 small onion, chopped1/2 c. Franks Buffalo Wing Sauce1 tin diced tomatoes2 c. cooked riceshredded cheddar to cover top of casseroleFF ranch or blue cheese if desired
Directions
-Cook chicken
-Soften celery and onion in a little evooo
-Add chicken with tomatoes and wing sauce
-Simmer, 5 mins
-Add cooked rice to the casserole dish
-Pour chicken mixture over rice
-Bake 20 mins or until heated through
-Add shredded cheese, bake 5 more minutes
-Serve with ff ranch or blue cheese dressing if desired
