TAMALE CORN PIE

Ingredients
1lb extra lean ground beef cooked and drained1.2 large onion1 packet taco seasoning mix1/2 cup water1 can black beans drained and rinsed1 cup frozen corn1 cup sharp cheese shredded1/2 cup all-purpose flour3/4 cup yellow cornmeal1 teaspoon baking powder1/2 teaspoon baking soda1 teaspoon salt1 egg, well beaten (use Egg Beaters)1 cup buttermilk
Directions
Brown ground beef drain and rinse under hot water to remove excess fat. Return to pan add onions, clean rinsed beans, frozen corn, taco seasoning mix and water. Cook and stir until water is absorbed and onions are tender. Place meat mixture into a 9 by 9 casserole dish. Top with cheddar cheese. In a large bowl mix flour, corn meal, baking powder, baking soda, salt, egg whites and buttermilk. Top casserole and bake at 400 degrees for 30 minutes.

***Be sure to drain and rinse all caned items to remove excess salt, rinse beef under hot water to remove excess fat.

Makes 8 size-able portions of about 1 cup serving size.

    Very good recipe. We like more veggies in tamale pie, so I added chopped bell peppers, Rotel tomatoes with green chiles, oregano and black olives, and I used homemade cornmeal mush (polenta) instead of cornbread for the topping. - 2/13/15
