Cinnamon Apple Muffins

Ingredients
1 1/2 cups quick cooking rolled oats 1 1/2 cups boiling water1/4 cup flax seed (milled)1 1/2 cups whole wheat flour3/4 cup brown sugar1 1/2 tsp. baking powder1 tsp baking soda2 tsp cinnamon1 tsp allspice 1 tsp cloves1/4 cup honey 1/4 cup applesauce2 eggs2 t olive oil1 tsp vanilla5 apples chopped
Directions
pre heat oven to 325 Spray tins with Pam
pour boiling water over oatmeal stir let sit for 20 min.
combine flour/sugar/baking powder and soda , spices in large bowl
In small bowl mix honey,applesauce,eggs,oil and vanilla. Add to flour mix stir till moistened. Fold in apples.
Bake 25 minutes
