Vanilla Wafer Cookies

Ingredients
Ingredients: 1/2 cup butter, softened1 cup sugar1 egg1 tablespoon vanilla extract1-1/3 cups all-purpose flour3/4 teaspoon baking powder1/4 teaspoon salt
Directions
In a large bowl, cream butter and sugar until light and fluffy. Beat in egg and vanilla. Combine dry ingredients; add to creamed mixture and mix well.
Drop by teaspoonfuls 2 in. apart onto ungreased baking sheets. Bake at 350° for 12-15 minutes or until edges are golden brown. Remove to wire racks to cool. Yield: about 3-1/2 dozen.

    But I "tweaked" your recipe a little - I used 1/2 c splenda & 1/2 cup sugar; used 2 egg whites instead of one egg (reduced the fat); 1 c whole wheat pastry flour & 1/3 c A/P & added 1/2 c rolled oats (to increase fiber). And they turned out great! - 1/31/09

    Tese were so awesome! Verry sweet and buttery tasting. I did use an egg white instead of an egg, and 1/2 cup Splenda with 1/2 cup regular sugar. I have to be careful to only eat a few of these at a time because of hoe good they are. - 6/14/10

    They tasted nice but looked a disaster.
    My first batch all stuck together and were very thin. Hard to get off the 'ungreased paper'.
    Realised I needed to really space them out and butter the paper, then turn out/got out fine. Still didn't look so appetizing but tasted pleasant :D - 3/1/10
