Kashi GoLEAN cereal, 1 1/4 cupsWheat flour, white, all-purpose, 3/4 cupWhole wheat flour, 3/4 tspBaking Powder, 1 1/2 tspBaking Soda, 1 1/2 tspSalt, 1/2 tspCinnamon, ground, 1 tspNutmeg, ground, 1/4 tspGinger, ground 1/4 tspMilk, nonfat, 2/3 cupEgg, fresh, 2 largeBrown Sugar, .1/4 cup, packedVegetable Oil, 1/4 cupNatural Apple Sauce, 1/8 cupCarrots, grated, 3/4 cupCranberries, dried, sweetened, 1/2 cup
Pre-heat oven to 375 degrees. Combine cereal, flour, baking soda, baking powder, salt, cinnamon and nutmeg. In a seperate bowl, mix the milk, sugar, applesauce, eggs and vegetable oil. Stir in the craisins and grated carrots. Mix the dry and wet ingredients until moistened. Using an ice cream scoop, divide into muffin tins. Let sit for 5 minutes before baking. Bake 15-18 minutes and let cool on a wire rack.
