Chicken & Bowties w/Roasted Red Pepper Sauce

3 oz grilled boneless, skinless chicken breast2 oz bowtie pasta1 small clove garlic1/3 c part skim ricotta1 T grated parmesan1 tsp parsley1 large red bell pepper1/3 c frozen peas
Place bell pepper directly on grill and roast, turning until blackened on all sides. Place in brown paper bag, close bag and wait until cool enough to handle. Remove skin, stem and seeds.
(May used jarred roasted red peppers). Place in bowl of food processor with garlic, parmesan, parsley and ricotta. Blend until smooth.
Cook pasta according to package directions. Place frozen peas in strainer and pour pasta over peas to drain. Put chopped, cooked chicken in pasta pan, add sauce from processor, fold in pasta and peas. Makes one generous serving.
