Cheesy Twice Baked Potatoes

4 baking potatoes1/2 cup skim milk4 oz. Velveeta pasteurized prepared cheese product (cubed)1/2 cup chopped red peppers
Heat oven to 400. Prick potatoes in several places with fork. Bake 1 hour. Reduce oven temperature to 350.
Cut thin slice from top of each potato. Discard tops; scoop out centers into medium bowl. Leaving 1/8-inch thick shells. Beat potatoes with mixer for 1 minute. Add milk and Velveeta cubes. Beat until fluffy. Spoon into shells. Top with chopped red peppers.
Bake 20 minutes or until heated through.
