Kohlrabi Soup

Ingredients
3-4 good sized kohlrabi2 tablespoons light creme fraiche (or light sour cream)4 cups vegetable brothsalt and pepper and nutmeg to tastebutter-flavored cooking spray can be used as a substitute
Directions
Peel and chop kohlrabi into bit-size pieces. Spray pot with cooking spray and fry kohlrabi until it is slightly browned. Make sure to stir often! Add vegetable broth and bring to a boil. Add creme fraiche, salt pepper and nutmeg. Cook until the kohlrabi is soft but not mushy. Taste and adjust seasoning accordingly. Enjoy!
