Black Beans and Rice

1 cup white rice, uncooked (brown can be used)1 (14.5 oz) can stewed tomatoes1 (15 oz) can black beans, drained and rinsed1 cup canned corn, drained3 cloves garlic, chopped1/2 tsp cumin (or to taste)1/2 tsp garlic powder1/4 tsp cayenne peppersalt and pepper (to taste)cilantro, chopped (to taste)1/4 cup water if needed
Cook the rice according to package directions (you can do this ahead of time if you want).
In a large saucepan or deep skillet pour in tomatoes and chop up with a fork.
Add cooked rice, beans, corn, garlic and spices, stir and cover. Heat on low for 10 minutes, stirring occasionally. If rice mixture gets too thick add a bit of water. Add fresh chopped cilantro and serve.
More spices and chopped onion can also be added if you would like extra flavor.
This is perfect as a vegetarian lunch, dinner or side dish and is great the next day too!
