Five Spice Beef 'N Rice

Ingredients
1 Lb Lean Ground Beef3/4 Cup Chopped Onion1 tsp Salt1/8 tsp Garlic Powder1/8 tsp Thyme1/8 tsp OreganoSmall Bay LeafDash Pepper1 Can Reduced Fat Cream of Mushroom Soup1 Can Diced Tomatoes1 Cup Minute Brown Rice3 Slices Fat Free American Cheese
Directions
Brown meat and onions, then drain. Add seasonings, soup, tomatoes and rice. Stir well. Bring to a boil, then reduce heat and simmer 5 minutes, stirring occasionally while rice fluffs. Spoon into 1 1/2 qt baking dish. Cut the cheese slices in half, and put on top. Place under broiler and broil until cheese is melted.

    I made this in a crockpot, then added the cooked rice. Served it with low-fat sour cream. This was a family favorite when my husband was growing up and this version was far tastier than he remembered. Great dinner for my family. - 4/26/10
