* *Newman's Own Tomato & Basil Pasta Sauce, 2 cup (remove) * Eggplant, 1 cup (1" cubes) (remove) * *Summer Squash, 1 cup, sliced (remove) * Mushrooms, fresh, 8 ounches, chopped * Onions, raw, 1 medium chopped * 5 leaves of fresh basil * 1/2 -1 tsp of fresh oregano (i like mine flavorful) * 1-3 TBS garlic, crushed * al fresco Sundried tomato chicken sausage, 4 links, sliced**** (These have no gluten, MSG or nitrates. If you cannot find this brand, any brand with gluten free sausages that are 140 calories each will work)
Put everything into a crockpot with 1 cup of water. Mix and cover with a lid.
I let mine simmer for 5 hours on high.
You can make this on the stovetop, if you wish, too.
Serve as is, or over pasta or Spaghetti Squash.
