Potato Soup

Ingredients
2/3c margarine2/3c flour7c skim milk4 large potatoes4 chopped green onions1 1/4c shredded cheddar (2% milk kind)1c reduced fat sour cream1 tsp salt and pepperBacon to taste
Directions
In dutch oven, melt margarine over medium heat. Whisk in flour until smooth. Stir in mlk and whisk constantly until thickened. Stir in potatoes and onions - bring to a boil. Reduce heat and simmer 10 minutes. Mix in bacon, cheese, sour cream, salt pepper as desired. Continue cooking, stirring frequently, until cheese is melted.
