Potato Torta with Fresh Mozzarella

1 T. olive oil1 c. red potatoes, sliced very thin2 oz. fresh mozzarella3 medium tomatoes, peeled and diced3 garlic cloves, sliced thinlydried oregano to tastesalt and pepper to taste
1. Preheat oven 425 F
2. Lightly coat casserole dish with non-stick spray or oil
3. Arrange one layer of potato slices in dish
4. Add half of mozzarella, diced tomatoes and garlic
5. Season with salt, pepper, oregano and a dash of oil (just remember that this recipe is only calculated for 1 T. of oil)
6. Make another layer and end with a layer of potatoes on top, drizzled with a little oil
7. Bake for 40min. or until top is golden brown; if top layer gets really brown, just cover the dish with foil and cook until potatoes are tender
