Chasen's Chili

Ingredients
1/2 pound dry pinto beans2 cans (20 oz ea) Italian Plum Tomatoes undrained2 tsp olive oil1 onion chopped1 green bell pepper chopped1/3 cup chopped parsley4 cloves garlic, minced1 pound lean ground pork1 1/2 pounds lean ground beef2 Tbs chili powder2 tbs salt1 tsp pepper1 1/2 tsp round cumin
Directions
Wash the pinto beans and soak them overnight or at least 8 hours. Drain the water and simmer the beans in fresh water until they are tender. Add the tomatoes to the beans and simmer for an additional 10 minutes.

In another pan, heat the oil and saute' the onions and green peppers until tender, stirring frequently. Add the parsley and garlic.

Saute' the ground meats until well browned. Skim off any fat in the pan. Combine the meat with the cooked beans and the onion mixture. Add the spices, cover, and simmer for 1 hour.

Uncover the pot and simmer for an additional 30 minutes. This can be chilled and prepared several days in advance which will give you a chance to skim off any fat.

Heat and serve with cheddar cheese or sour cream.
