Sophi's Slaw

Ingredients
3 cups shredded red/purple cabbage3 cups shredded green cabbage1 cup grated carrots (I ran out so they're not shown in the picture)2 Tbsp regular mayo (or Smart Balance brand)3 tsp deli mustard of choice2 Tbsp honey1/4 cup rice vinegar (or vinegar of choice)A pinch of salt and pepper to tasteAlmost ANY ingredient or spice can be added to a slaw for personal taste or to make it your own unique dish. By shredding the cabbage to a fine consistency of 1" - 2" strips, makes for an easier time in chewing and feeding to younger slaw-lovers. Making your own honey-mustard instead of using store bought stuff, allows for more appropriate and healthier choice of ingredients and proportions.
Directions
Whisk together your vinegar, spices, honey, mayo and mustard in a large salad or mixing bowl. When everything looks smooth and creamy, add your carrots and cabbage. Stir together with a gentle folding motion. There should be more than enough sauce to evenly coat all that cabbage and maybe even more!

Remember to stir again before serving, sauce will settle.
