Vietnamese Beef Stew (Bo Kho)

1/2 t. 5 -spice power1/4 t curry powder1/2 t crushed red pepper flakes2 t salt2 T tomato paste2 T oyster sauce1 1/2 lb round steak or stew meat2 T oil3 cloves garlic, crushed1 medium onion, chopped5 c water1 stalk lemongrass smashed
In a large bowl, combine 5-spice powder, curry powder, red pepper flakes, salt, tomato paste, and oyster sauce. Marinate beef in this mixture for at least 15 minutes.
Heat oil in a large soup pot and stir fry garlic and onion until browned. Stir in beef and continue to stir fry over medium heat for about 10 minutes. Pour in water and bring to boil. Use a ladle to skim foam. Add carrots and lemongrass, and simmer stew over medium heat until beef is tender, approximately one hour.
