German Potato Soup

Ingredients
4 tsp. smart balance buttery spread or margarine2 c. onion, chopped (or 3 c. sliced leeks, white part only)1 c. carrots, chopped1 c. celery, diced6 c. fat-free chicken broth4 c. diced potatoes1/4 tsp. black pepper
Directions
Melt buttery spread in pan over medium heat. Add onions, celery and carrots until onion is nice and tender. Add chicken broth, potatoes and pepper. Cook 15 min. or until potatoes and carrots are soft. Process in a blender. I had to split the batch in half to allow it to fit into the blender. Makes 10 1-cup servings.
