2 lbs diced beef bottom round6 C beef broth (reduced sodium)4 carrots -chopped1.5 C chopped onion8 ounces sliced portabello mushrooms1 can diced tomatoes2 C potato - diced.75 C kernels corn (frozen)1.5 C green beans- 1/2 inch pieces3 cloves garlic-minced2 tsp olive oil1 tsp black pepper
heat olive oil and garlic in dutch oven.Brown beef in oil/garlic mixture then add pepper, tomatoes, broth, carrots,onions and simmer on medium-low until beef is tender. Add mushrooms and potatoes and continue to simmer until potatoes are tender.
