Pumpkin Banana Muffins

Ingredients
1.5 cups canned pumpkin.5 cups mashed banana4 eggs1-1/3 cups non-fat powdered milk4 tsp pumpkin pie spice (to taste).5 cup splenda1 cup grated carrot.75 cups whole wheat flower.25 cups oat or wheat bran.75 cups golden raisins.25 cups sunflower seeds (hulled)2 tsp baking soda2 tsp vanilla or vanilla substitute
Directions
Combine all ingredients in large bowl and mix well. Spray muffin tin with Pam and spoon each cup about 3/4 full. Bake at 350 for 20-30 minutes. Makes about 15 muffins.

    This was a HUGE hit at my house... super yummy. I didn't have carrots, so I used more pumpkin puree, and I also replaced the raisins with dried cranberries... my neice, who is super picky, LOVED them. I'll make a loaf for Thanksgiving. Great! - 11/24/08
